Meet the Culinary Masters Behind Ember

Bradley Davids

– Executive Chef 

Born in South Africa, Chef Brad grew up cooking over open flames, a tradition known as the “braai.” His culinary journey spans New Zealand, the USA, Canada, Southeast Asia, and Europe, refining his skills while keeping fire at the heart of his cooking.  Now at Ember by Fire Baby Gold Coast, Brad transforms locally sourced ingredients into bold, fire-kissed dishes that blend his South African roots with international influences, creating a truly memorable wood-fired dining experience. 

Lee de Vry

– Head Chef 

Lee began his career at Moo Moo, mastering modern Australian and seafood cuisine, then led a modern Vietnamese restaurant in Melbourne, developing a love for balance, freshness, and texture. Returning to the Gold Coast, he earned acclaim at Blowfish, including a coveted Chef Hat.  At Ember, Lee collaborates with Brad to explore fire, smoke, and seasonality, crafting bold, soulful dishes that highlight locally sourced ingredients and elevate the Ember by Fire Baby Gold Coast dining experience.

Parking & Getting Here

Council On-Street Parking

Council-managed on-street parking is available right on Welch Street and nearby streets. Rates are around $2.50 per hour from Monday to Saturday, 9 am–5 pm. Pay with coins or card at the meters.

PriPark – Marshall Lane

For an easy flat-rate option, the PriPark car park on Marshall Lane (also accessible from Welch Street) is just a short walk from Fire Baby. Casual all-day parking is only $8.

Catch the G:link Tram

We’re also just a few minutes’ walk from the Southport G:link tram station. Simply hop off at Southport, stroll down Scarborough Street, and you’ll be at Fire Baby in no time — perfect if you’d rather skip parking.
